My bid to ‘upgrade’ to a monthly pay as you go subscription pack has rather resulted in a new sim and mobile number. Anyone knows how to rectify this please online? I’m overseas and not returning to the UK for 2 months.

How did you 'Upgrade'? Sounds like you ordered a new PAYG SIM from the EE site.
If you ordered by phone or online you always have a statutory cooling-off period up to 14 days after delivery to cancel your order FoC. If you ordered in-store you have no such "change-of-mind" right of return.
