For anyone searching for the answer to this as it took me 2 days, you CANNOT move PAYGO monthly esim from an old phone to a new phone as another esim UNLESS you convert your contract into a monthly contract.
In essence bye bye EE I will be going somewhere else, very poor process for customer retension.

@sandyring : You are not paying PAYG monthly. You are paying every 30 days. It is not a contract.
You can't have an eSIM on PAYG.

EE do not offer Esims on PAYG. Esims are only available on pay monthly accounts.

i am paying monthly rolling and i was advised i still cannot get it moved to an esim, either way it doesn't seem like EE want to keep my business to be honest.

@sandyring A contract has a minimum term ie 12 months or 24 months. Just because you’re paying monthly for PAYG it doesn’t mean it’s a contract.

Well, EE do offer some PAYG SIMs as eSIMs for international travellers, but they are not designed for long term use or to move between devices.

you can pick an eSIM at airports but they’re not meant to be used a long time as there for travellers not residents of the UK.
And I wonder how many other people are gonna kick up a fuss when they realise they can’t swap their eSIM onto their new device because they didn’t listen when they got told that eSims are not available to EE pay as you go customers and found a work around via the above link posted by @XRaySpeX or simply getting a traveler eSIM from an airport thinking it was going to work long term without issue.
Perhaps people will listen in future.
