I have bought a new phone. Its a simple Nokia for SMS & Calls only
No internet/email/wifi capabilities
My current PAYG set up is £10 for 1 month of 8GB, 500mins & unlimited SMS
My Q: can I pay £10 for 500 SMS & 500 calls (or something similar) - and top up when these have been used up, rather than having to update without using them all just because 30 days have passed?

No. All packs include data. You could buy add-ons of calls & texts separately by texting ADD MINS & ADD TEXTS respectively to150 but these also would only last 30 days. Otherwise you could just pay for your calls & texts straight out of your top-up credit at standard per-unit rates.
