Hi I am going to Greece for 5 days and it will be cheaper if I get the 7 days access to eu roaming rather than paying each day. What would happen if I buy the 7 days access but only need it for 5 days?

You just pay for it. You either buy 1 day passes or a week's pass. A week's pass is cheaper than 5 x 1 day passes.
