Trying to set up my pay as you go sim (was told by the guy in the ee shop I would be able to do this while away) but having no luck I am able to receive texts from EE only (verification codes etc) but otherwise nothing is working… Is there anything I can do, can’t call either as it’s not allowing me too 

I need to get this sim working 😭

Had you used that PAYG SIM for making calls or texts in UK before going abroad? To be used abroad EE PAYG SIMs need 1st activating on EE's home UK network. If it wasn't you can't now use it until you return to UK.

No I didn’t use it… the guy in the EE shop never said I had to or even mentioned anything just said I could set it up when I’m away😭 

I have now topped this sim up, is there anything way to get a refund? Without calling EE up as it won’t let me? Or can I transfer it to a different ee account etc

PAYG credit is not generally refundable nor transferable, but it's worth calling CS to see if it can be done in your case.
