Is it possible to provide historical data relating to sent and received text messages and phone calls for a domestic abuse court case?

You cannot retrieve the contents of calls & texts but you can obtain their metadata, like times & recipients for outgoing calls & texts but never incoming.
You need to be paying for Itemised Billing @ £2.50 pm at the time to see all your outgoing calls & texts. It is not retrospective.
You could perhaps submit a Subject Access Request (SAR) by using the online GDPR Form. That should include outgoing calls & texts. It normally takes up to a month but could take up to 3 months.
If it is a legal matter your solicitor, the Police or the Courts might have a quicker method of access to EE for this purpose.
To phone EE CS: Dial Freephone +44 800 079 8586 - Option 1 for Mobile Phone & Mobile Broadband or Option 2 for Home Broadband & Home Phone
