It’s happening with me everyday in zone 1 areas in London, and when I go to network checker it says that the 5g signal is good. It’s even hard to use google maps or social media. So bad

The coverage checker is a data model and does not factor in terrain or buildings so in a city like London it would be wrong. Try OpenSignal app as it uses real data submitted by users

All radio networks use similar modelling, and terrain is a factor.
There are a couple of notable crowd-sourced coverage tools, OpenSignal is one.
