I thought I’d jump in here as well…
I’m having exactly the same issues, like others have said it’s not technical hardware. And only when making calls to other EE phones, happens on data and Wi-Fi calling unfortunately. It’s absolutely abysmal quality, and often leading to annoyed people on both ends! End up having to finish our phone calls early sometimes after a few minutes, this is just not good enough.
I have multiple lines with EE and considering moving them all due to this.
Why isn’t EE taking this seriously?

Calls between EE 4G/5G phones should use either "HD" or "HD+" encoding, providing close to in-person clarity. Are you able to use mobile data whilst on calls? That's a good indication of using VoLTE (4G-calling).
Are you using Android or Apple? The on-screen indicators for the alternative wideband codecs do differ.
