Is this just an issue of your onscreen signal bars fluctuating, if so that's quite normal. Or are you having any problems with calls as a result?

No, it’s not the onscreen bars fluctuating, in fact they show good strength but when I am on a call it goes silent as though the call has dropped and I can’t hear anything. I know it must be an EE issue as it happened when I was in the phone to the garage and the girl asked if I was on EE as both her and her partner have been having the same issues for the last 2 weeks.

These issues are the same that my partner and I have been having here in Newcastle and we are both on EE, and for my partner and his mum in London both on EE, for over a week now. Very frustrating.

Loss of in-call audio is indeed a widely reported issue at present.
You can report it using the webtool status checker - https://coverage.ee.co.uk/coverage/ee , follow "check status" and then "report a problem"
