Hi @Poorsignal02 ,
It's worth checking https://www.cellmapper.net to see if you might be in a deadzone for this particular service provider, and perhaps your previous service providers had cell towers very near your position.
The OpenSignal app is also very good to see which service provider is the best for your area although it will not highlight particular buildings in which the signal may be particularly bad as different from the locality in general.
You can use the "Check network" button on https://coverage.ee.co.uk/coverage/ee to see local issues, but I suspect from your experience you believe it to be a general issue of the location and not a transient problem.

This is a Community Support Forum, so saying stuff like Sort it Out or I'm Off at the end of the month probably isn't going to cut you much slack on here if I'm honest, have you tried Contacting CS or Tech Support on 150 they can probably run a few tests or check your Account to see if everything is all on place and as it should be.
Are you on PAYG or Pay Monthly, what sort of issues were you having that you decided to leave GiffGaff and O2.

Hello @Poorsignal02
Let's make sure the basics are covered here - you've not said whether you're on PAYG or pay-monthly, and there are circumstances where it can make a difference, so which are you?
Do other EE users in your home have similar problems to that which you're experiencing? That's an excellent test of whether your phone may have issues or not. Equally, does your phone work ok in other locations?
Does the EE coverage checker make any reference to 4G-calling in its coverage prediction for your location? If you're on PAYG and it does, this could be indicative of a problem. Equally, if you use the link for "check network", this goes to the faults & issues section of the site - are any issues reported for your locality?
