Your pic doesn't seem to be loading. Do you mind me asking what phone you're using?

iPhone 15 Pro. When I signed up to the new plan I did a sim swap and the switch was no longer greyed out. If you open the EE app, click your profile at the top right corner, then choose settings and permissions (twice) , scroll down and you will see “Replace my Sim” you can replace eSIM for free, they will text your old one to activate the new one so don’t do anything with it until new one is working.

If you have a plastic sim there should be an option in the “Mobile Service” screen at the bottom to convert to eSIM, this should do the same job.

I actually converted my physical SIM to an eSIM after I changed my package yesterday but there's no indication that I'm able to use SA. I guess it's not available for the S23 series yet. I wish there was clearer information on what devices are currently compatible.

Their publicity says comparable phones and an S23 is, I would call 150. Is your Android version fully up to date?

Yeah, I've made sure my phone is completely up to date and have restarted it a few times. I'll try give 150 a call if I get the chance. It just would have been nice for them to actually explicitly state what devices are compatible.

Some info I found on Twitter. The official EE account replied to someone with this:

"The Samsung S23 & 24 line-up will be EE 5G Standalone enabled with VONR shortly, with further smartphones from Samsung, Microsoft, Google, Sony and others due to be enabled in the coming months."

Now my question is how soon is "shortly", haha?.

Finally, 5G standalone is working on my Samsung Galaxy S24 Ultra after the latest software update! There's not much speed improvement, which is expected, but the latency seems to have improved. Voice over 5G is also working. I am currently in Birmingham.
