Hi I’ve recently transferred from Sky to EE. I had my old phone number transferred over today, I then powered my Iphone 15 off and then back on again and since then my unlimited data will not work regardless if I have full bars of service . Before I did this my data worked perfectly fine with my temporary number??

Are you using the same phone on EE, as you were on Sky? It could well be trying to use Sky/O2's config if so.
Install the EE-specific config from https://setup-ee.wdsglobal.com/internet as a first step.
Or are you saying that mobile data has worked fine, until your port-in, at which point it has stopped working?
