How is it I can buy numerous ee4g SIM cards with a static ip on line from various retailers but when I try to do it direct from ee they won't entertain me?

EE don't issue static IP's so the services you are referring to will not be static IP's issued by EE, rather they will be via a MVNO service.

EE standard opening hours are Monday to Friday, 8am to 9pm - Saturday and Sunday, 8am to 8pm.

I have not got a static IP, but I want one was my point.
I can buy a static ip from an online shop which is ee. I cannot buy or have a static ip on any of the 4 sims I currently have with EE.
Not having a static IP compromises my broadband functionality. If I was able to have a static landline to my home address I could have one, Why can't I buy an EE sim with a static IP

EE do not do static IPs on their mobile network. In fact they don't really do proper dynamic IPs. The EE mobile network uses Carrier Grade NAT (CGNAT) resulting in a double NAT which means you don't get your own public IP address but share it with other users. So you can't be uniquely id'ed on the Net & therefore your LAN cannot be addressed from outside for unsolicited accesses.
Even if you had fixed Home BB you won't often get a static IP. Not many ISPs do them.

I can buy an ee SIM card with a static IP address but they are £75 per month for unlimited data which is twice as much as I am paying. Numerous outlets are selling them. Why can't I buy direct from EE?

numerous places, to many to mention, but this store sells ee vodaphone pretty much all of them as do many other shops.

You can get a Static IP Sim from EE but only as a Business Customer.
It does not appear in the Business Shop though, if you are a Business Customer you need to proceed via your Business Advisor or Account Manager.

Anyway those Fixed IP SIMs from 3GRouterStore require the use of a VPN at extra cost from them. That's how they manage to give you a static IP on their own network, not EE's. It also follows that any existing EE SIM you have cannot be turned into a static IP by such a method.
