Plex and EE Mobile 5G Router

Being in an area where I can only get 5G for anything decent internet wise - I got the Sim only plan for my ZTE T3000 router and the MC889 modem. 

The problem arises when we try and access the network for Plex and CCTV. 

I have enabled ipv4 and ipv6 in the modem as well as the Router, and yet still have issues. We managed some form of limited connection but it constantly dropped. 

The router has this option of Port Forward & Port Mapping as separte options. (Arn't these the same?)

I have manually specified ports for all the programs and ips on the network. I disable UpNp was was suggested in another thread. 

Plex tells me the servers are available outside the network but I am unable to access. I have PCs all set to private network to, to make them visible on the network, and have enable media sharing. 

The IP cameras we can not access at all

Plex says we should but doesnt show anything. 

I've tried using Port Mapping on it's own. Tried Port Forwarding on it's own. I've changed the PLEX network settings to IPv4 and IPv6 - and both of those singularly and still nothing. 

Does anyone have any definitive settings that need to be in place - if I can get one server to work, I can then clone that for the others. 

Any help is greatly appreciated.
