I went into an EE store this morning and upgrade my sim from a PAYG to a pay monthly and the staff member that helped me said it would change immediately yet it still hasn’t changed also I haven’t received a confirmation email or message to say that I’ve changed over

It's great news that you're moving from a PAYG account to a pay monthly tariff.
The transfer may take up to 24 hours to complete, but as @Chris_B mentioned, if you restart your device, you may notice the transfer has been completed.
If you have access to your My EE app, does it show your old plan or your new one?

It shows that my PAYG account has been closed but not my current plan

Yes I have restarted the device I now have access to to my monthly plan I’m going to wait the 24 hour window to then hopefully gain access to the plan on the EE app
