Great to hear you've purchased a Graphics Card!
For add-to-plans, the Xbox pass should automatically be added to the mobile number which you monthly accessory cost is added to.
If you go to ee.co.uk/xbox

Yeah, there nothing there, the purchase was made 2 days ago and delivered yesterday, no texts received re the 24 month bundle, do I need to wait on a text?

The text is sent automatically once the subscription is added to your line.
It may be worth waiting for the text, as that will indicate it has been added 🙂

In addition to this when i look at addons in my ee, I see the following
Xbox Gaming Bundle
Free
This add-on cannot be removed
So looks like its there, I just dont know how to activate it and I haven't received a text, there is only one mobile number on my account also

Thanks for coming back to us.
Have you tried to clear the cookies and cache from your browser. or tried another browser or device to see if the same thing happens?
It is also worth trying it over mobile data rather than WiFi.
Let me know if that lets you get any further.
