Can't link sim to account

I bought a pay as you go sim card. Registered a new EE account but I can't link my sim via desktop and mobile app. After some research, I know this is an ongoing issue for weeks now,  but I am in a foreign country (USA) now and I can't make international calls at the moment (I heard the wait is awfully long). 

"We're having trouble linking your products.  You can try linking again or come back later when we've fixed things."

Is EE ever going to fix this or should I just have someone bring over another sim from a different provider? It's frustrating cuz I don't know my balance and I don't know when to top up!!
