My daughter is in Australia and doesn't use her ee SIM, can I suspend it in my account as I'm paying £11 a month for her. I have 2 other Sims on the family plan?

No, you cannot take a payment holiday just cuz the SIM is not being used currently. EE is still providing the service you are contracted to pay for even if you choose not to use it.
