My contract with EE has ended because I didn’t pay the bills on time, as I was forced to leave the UK for health reasons. If I pay that amount, will I get back the phone numbers I had, or is there no chance to continue using them

If you have been disconnected for non-payment, I rather suspect your numbers are now in quarantine before they are ultimately released back for re-use.

Depending on the timescales involved, there may be a chance of recovery.

After how long time will be release for re-use ? 

Right now i still make payments. I need these numbers 😁 to many things i have to change if i don't get them back 🫣

We couldn't say for sure if you'd be able to get access to these numbers again. You'd need to settle any outstanding balance, and then discuss your options with our team directly.
