I currently have a EE iPhone mobile contract with SIM card, but I would like to pay off this contract as I want to trade in this phone with apple and get a mobile contract with them due to a better offer. However I would like to have a sim only contract with EE and keep the same number. How would this work? Also my current contract will end at the end of January.

You mention getting a contract with Apple, but they're not a network operator - they're a device manufacturer.
If you want to buy your chosen phone from them, simply do so and then insert your existing SIM into your new phone. An early upgrade is generally only available if you're purchasing a new phone on FlexPay, but there's no harm trying.

@terrelljc : EE might let you upgrade early to a SIM Only contract by paying off your current contract.
What happens if you try to "Upgrade Now" from your EE a/c?

@XRaySpeX I’m hoping that’s possible as I would like to keep my number with the EE sim, just simply get an upgrade with apple. Which I will pay off the rest of my contract first.
For some reason I have issues with the EE website and EE app which I raised with EE already, but when I do press that option it just shows trade in options and phone upgrades etc.

Just ring EE, the department you got the phone and sim from I’d assume and just explain the situation to them. Usually they will take a look and see if they can beat the iPhone trade in price/discount which would mean you could keep both with EE and not have to worry about separate bills and dates etc.
if they can’t beat the Apple offer then I’m assuming you’d just pay the remaining balance on the phone part of your contract with EE making the phone 100% yours to do with as you wish but the sim side of it would either carry on regardless of phones removal or they may have to end that one too, but that could be a bonus for you as you may find a cheaper but better for your needs, pay monthly sim so you may find that you’re saving money. And lets face it, every little helps.pmsl.

@Flower77 : If you pay off & cancel the phone contract you will be doing likewise for its SIM & thus lose the no.

No you won’t! The phone itself is part of the sim package or vice versa but are both classed as separate entities on the same account, but as amounts are added together and just show a total on each bill you forget that it’s separate until something like this happens.
If you look when trying to find a phone and also pay monthly sim, it gives you the price of phone, price of sim monthly and amount together. Which is the monthly price of the basic bill you pay.
It’s the new way a lot of companies are doing it as customers were beginning to question just how much each was costing to ensure they weren’t being ripped off. So the companies decided to share those detail and be honest with customers. I don’t think anything untoward had been going on but it was nice to be able to have a nosey.lol.

@Flower77 : Only if bought on the modern flex-pay scheme but I think this user's contract is too old for that.
