I’ve contact EE on 5/12/2023 to end my contract why haven’t I received an email confirmation regarding this and they took the full payment out it my account?

If you gave 30 days cancellation notice on 05/12, then your service remains fully live and active until 04/01 or thereabouts.
You will receive a final bill around a week later as per https://ee.co.uk/help/profile/leaving-ee/im-leaving-ee-what-will-happen-with-my-bills
