Hello,
I have just received my new phone with my new contract. Is it possible to cancel my EE sim but keep the phone and pay monthly for just the phone?

Didn't you do an upgrade? That would get you your new phone to use your existing SIM in. That's what upgrades are for.

@KathrynW The phone is part of the contract so if you cancel the sim contract you’ll be required to pay off the device to keep it.
