EE's traditional plans do not have any concept of "paying off a phone" or splitting any costs, you have one single payment covering all your services. That single payment continues on a rolling basis for at least the duration of your minimum term, but still carries on unless you explicitly make a change.
You can move to a SIM-only plan after your minimum term is completed, or receive a 10% discount after 3months if you remain as you are.

Do what in store? Be aware that anything you buy instore does not come with any 14-day cooling-off period.

You can browse SIM-only plans online, and then change to one either via contacting CS or proceeding via your myEE online account.
