Hi I currently am using iphone SE and have the opportunity to switch to sony xperia 5 ii with dual sim.

Can anyone tell me if the phone is fully supported and if it's straightforward to change my SIM only contract to dual sim?

You dont need to change or do anything to your Contract.

Assuming the Phone is Network Free and a Globel Version then just pop your EE SIM in and away you go, the second Slot for the second SIM doesn't need to be used but can be used with another SIM from a different Network ie, Personal and Work SIM or an Overseas Sim if  you ever go Traveling.

Hi @RachelD52.

As mentioned above, as long as your SIM card fits in the new phone and it's unlocked, you can start using it straight away.

The second SIM slot wouldn't be needed at the moment unless you have a second SIM card, either with EE or another network.
