I have an  Personal issue to do with a  Gesture and proof of this would be on WhatsApp but I don’t have access  To the messages anymore  it is Important I have proof for Legal reasons . I have the phone numbers  Of which messages where exchanges

EE is a network operator, they don't run WhatsApp - Facebook do. Your legal representative would need to go through their appropriate process to obtain the data they need from WhatsApp/Facebook.

Contact WhatsApp & issue a Subject Access Request (SAR) on them.

WhatsApp has end-to-end encryption so even they can't see what is sent.  They won't be able to provide anything.
