Purchasing credit on PAYG

I have an EE PAYG sim which I use in an unlocked Huawei MiFi device. Every time I purchase extra data it doesn't add the extra data to the sim, when I check My EE account the purchase shows up as credit balance.   The last time this happened (2 weeks ago) it took 15 minis on the phone to EE customer services who quickly converted the credit balance to extra data.  Surely I don't need to do this every time I want to add/purchase extra data.

Is there a way I can simply purchase extra data rather than extra credit.

You are not purchasing data. You are simply topping up your credit, They are 2 separate exercises.
