I've just got my new phone. I knew it would not come with a plug but they sent it with a USB-C to lightning cable? I'd understand if it was USB-A to USB-C so you could charge it off of any multi adaptor but how am I supposed to charge my phone? It makes no sense to me. And if the USB-C to lightning cable is not for charging then what is it used for?

You need to buy one or more of the following:
- A Mac
- A new cable
- An adaptor for your cable
- A wireless charging point
Apple assume you are one of their existing ecosystem customers. They were sneaky in changing the cable from a usb connection to a USB -C although if your pc has this connection you can use that to charge.
Thanks

Any existing iphone lightening charger will charge it. Alternatively you can use any charger plug/adapter that has a USB-C port.
If not apple's 20w charger is circa £19, other brands available.
All depends if you want to "fast" charge - which needs the 20w or higher block 🙂
