If I sell my iPhone which is using an esim before I get hold of my new iPhone ,how do I go about re enabling the esim in my new device hope that makes sense

You can order a SIM card if you would like to use this in another phone until your upgrade arrives.
Or, if you’ve upgraded your EE device and had an eSIM before, you’ll need to log in to My EE and order a replacement eSIM to download to your new device.

So can I order the esim on my device to download on my new device when it arrives later in the week even though my old device will of been sold so not in my possession?

If you won't have the device to receive any verification code or anything that may be needed, it may be best registering a SIM card ready for when the phone arrives and then going to your My EE app and downloading an eSIM.
