Due SIM phone, 5G & Watch info

Hi, Just upgraded to iPhone 12 and now have two lines on one phone. 

QUESTIONS:

1] how do I set a different ring tone on each number, as how else am I to know to which number is being called?

2] I have an apple watch version 7.2 MODEL (A2008). This watch used to have a contract on its eSim, it's just been canceled, so it will now only work with the phone I have via Wi-Fi or Bluetooth. It's paired to the phone but I have no idea which number and it's not really clear what happens if the MAIN number (work) is called as to how to prevent the watch from ringing. I assume if I wanted to make an outbound call from the watch, this can be via my private number NOT my work number? I trust someone can assist me - Don

@via247  A non-cellular watch is just relaying notifications from the phone. The reason it will work if you have cellular activated on it it’s because that number in the watch is linked to your EE account of that number and then when someone calls. 

To contact EE Customer Services dial 150 From your EE mobile or 0800 956 6000 from any other phone.

@via247   If your watch is now work as none cellular watch it’s only paired to your phone not the number/s of the phone.   The watch will receive all notifications/calls/texts when your phone receives one regardless of the number that was sent to.

I ditched the esim account as the watch won't roam without a phone. My old phone was not a dual sim. I used an old iPhone 6 to pair the watch; I thought this was the only way I was able to have a "private number" to which the watch was "paired to". Annoyingly, you can't port a "private" number to the esim in the watch, thus I am more than irritated that now having canceled the watch contract which meant I didn't need another phone so the watch would ring if I paired it (I thought) to the esim of the dual sim phone. I now have poor compromise in that I have a private number on a dual sim phone with my work number where the bloody watch rings whoever is calling. This rather defeats the point of an apple phone watch with a dual sim phone and two phone numbers! I cant be sure which number I am dialing from if using the watch either! looks like I am going to have to ditch the apple watch and buy a Huawei watch that has a physical 4G sim! I then assume I can port the private number from the dual sim phone to the watch! ARGGGG
