Buying a new phone for Pay As You Go

Hi. I have an old Orange sim Pay As You Go phone. I want to buy a newer phone from EE, keeping my old number and staying on Pay As You Go. What should I do - do I buy the phone I want from the ee website and then port over my old number once it arrives; or is there something I need to do before/whilst buying the phone? At what point do I need to get a modern sim card that fits the new phone?
I also don't understand about the Packs, when choosing/ordering the new phone. Does this take money out off card every month automatically or is it only enabled with a manual top-up? As a Pay As You Go, I assume the later, but just want to double check!

@BobbyF : Orange SIMs should've been transferred to EE 3G by now. When texting NUMBER to 150 what network does it say you are on?

You can order a PAYG phone & just put your existing SIM in it if it fits. If it doesn't you can Order a replacement SIM for £1.50 or phone CS for one.
You don't need to top-up every month. You can manually top-up as & when you want. See What are pay as you go packs?
