eSIM to new iWatch

I want to transfer my eSim from my iWatch 5 to my iWatch Ultra2. They will both stay paired with my iPhone 13 and I will use both. It is just moving the eSim to the newer iWatch and removing it from my older iWatch.
Can I do it, if so how? or do I need to take them to an EE store to transfer it over.

@LesR1 Remove the new watch from your iPhone then unpair the old watch you’ll be given the option to retain the data plan then setup the new watch and then select the data plan when you pair the new watch.

Using this method, will I then have to re-pair the old watch to use it with my phone?
At present I have my 3 iWatches all paired with my phone and when I switch any one on it pairs with the phone.
