Is there anyway i can restrict my child using data when they should be sleeping?

You can toggle mobile data on and off in the EE app.

Just select the mobile plan in the app, and scroll down to settings.

On the EE app now. Have selected the mobile plan of my son and there are no "data toggling" settings to scroll down too. Why do these companies routinely lie about features that blatantly dont exist?

Tell me PRECISELY where in the app this feature is. Stage by stage...because it's not there.

Welcome to the EE Community

Once you login to the app, if you select Manage along the bottom, then on this page scroll to the bottom and select Settings, then select the number you wish to manage settings for at the top, and on this page there is Use Mobile data which you can toggle off and on to control the ability to use mobile data.
