I want to record all Gallagher prem rugby matches for this series - whilst this matches can be on TNT sport 1 to 3, selecting record on a game would "series link" all available matches for the season - it does not appear to offer this function - what am I missing ?

Series links are determined by the broadcaster policy on which content to include a series. So part of the answer is down to what TNT decide.
However the answer to your overall question is i suspect No, The reason is that for this season TNT Sports cover all the PREM league gaes and that means more than one game is shown simultaenously on different TNT Sports channels. Potentially TNT Sports could handle this by having seperate series identities for the primary game and another for the secondary games.

It's actually pretty rare for TNT to show multiple games simultaneoously across linear channels - this only tends to happen on the final day of each rugby season when all games are played at the same time, and historically TNT have shown 2 on linear, the rest on red-button.
At the end of the 2024/25 season, due to channel congestion (post Eurosport merger), only one game was shown on linear, the remaining on TNT5-10 red-button streams.
All that said, I think what the OP is getting at, is that TNT schedule live broadcast Prem Rugby games across different channels - usually TNT1 but in theory any of 1-4. A series link that's set on TNT1 would only pickup content on TNT1 and not 2, 3 or 4. The solution to this is a multi-channel series link which scans all channels for content.
My pay-TV service is with Virgin Media, and here the support for multi-channel SL's varies. The legacy TiVo-based boxes have this facility and it works well. The newer TV360-boxes don't. I have no idea whether EE-TV supports it, but based on the increasing push away from recording and towards an online-only world, I would assume they don't.

Tonight two PREM games on EETV at same time
Harlequins v Bath and Newcastle Red Bull v Saracens
neither seem to be currently to be part of a series (looking at EETV app schedule)

Harlequins v Bath is on TNT1, a linear broadcast channel and should be included on any series-link.
Newcastle v Saracens will be on one of TNT5-10 red-button streams & the Discovery+ app

@bristolian On EETV the TNT Sports 5 that i I believe TNT have selected to broadcast the Newcastle game an is treated as a (parttime) linear channel - it is registed with OFCOM as a channel so an EETV customer is able to view and schedule recordings. The EPG and metadata for EETV has been found to have issues recently so a missing series crid to enable a series link is not a total suprise. Other platforms that broadcast TNT Sports may be unaffected.

Contacted EE - (the lad that answered is Newcastle Falcon/Red bull supporter ....) he seemed surprised that the series link function was not working/ no longer available and said he'd escalate my query - I suspect that this function has been now removed - I'll report back on what EE advise me - good work EE progress indeed ! ... or entropy ....

@MattyBsomerset it is not function that has been removed but rather data that has not been provided. I suspect in the case of the Harlequins game tonight on TNT Sports 1 t is an (human or process) error that no series CRid is provided. Certainly shouldn't be happening as frequently as it is.
In the case of the Newcastle game tonight on TNT Sports 5 it could be a policy decision , an error or an overlooked scenario as how to handle a second simultaenous game.
