I’ve recently moved from Lincoln to Suffolk, and when tuning my tv, it won’t let me select my new region and insists on selecting Yorkshire region. How do I change to select Look East region?

Yorkshire is the best region that is why 😉.
Is this your EE TV box or TV, if TV what brand and does it ask for a postcode if you factory reset.
If EE TV box aerial or internal connection. Regions tend to be postcode driven.

Sorry to have taken so long to reply, slight medical problem.. my EE tv box is connected via HDM3 cable. Have reset my router. TV is a Samsung, bought when we moved to Suffolk.

With your TV box is this connected with an aerial as well as the HDMI cable, or are you receiving your channels over the internet?

In Lincolnshire, you are North of the East region,, which explains Yorkshire, as per this map:-

But you say you are offered the East Region. So what is their local News called?
One useful test would be to ask your neighbours if they get Look East, and maybe see if your aerial is pointing a different way from theirs, if they do,
Or put your address details in :-
https://www.freeview.co.uk/freeview-channel-checker
and then choose Detailed Channel View to see what transmitters you could get. Bit technical, though.
Or maybe just talk to a local aerial fitter, who would know if your aerial could be reoriented to pick up a transmitter offering Look East.

Isn't the east region what you want? Can you not select that?
