You may be offered to transfer your number while using Quick Start's Quick Transfer to initiate a SIM replacement, however if you are currently using a Physical SIM then following the advice below has a better chance of success.

If you can choose to set up later in Settings, select that and then download the EE App on the new iPhone. If you sign in to the EE App on the new device you can request an eSIM Replacement using your new device and it should allow you to download it to it.

In the EE App on the new iPhone go to Profile (top right) > Settings and permissions > Manage settings > scroll down to Replace my SIM/eSIM > choose the number you want replaced > choose "eSIM - Instant download".

This will send a verification text to the SIM in your old device and you should then be able to continue to download the eSIM profile on your new device. This will naturally deactivate the old SIM as part of the process, as your number can't exist on more than one device.
