Lots of posts with solutions to temp SIM number still being used after porting required number but mostly with this temp number still listed in My number. My problem was the temp number linked to messages sent, despite ported number being correct everywhere within iPhone. Solution I found was not only turning off FaceTime and iMessage before restarting but ALSO turning off RCS messaging within the message app in settings. Saved my sanity!!
Solved! See the answer below or view the solution in context.

Added notes - (1) after restarting iPhone, RCS stuck on activation. Restarted again and RCS activated within few minutes. Enabled RCS messaging again and problem resolved; (2) Problem with temp number was solely on RCS sent messages and not with SMS messages nor iMessages; (3) Solution likely to be EE to advise turning off FaceTime, iMessage AND RCS before porting completed by restarting iPhone.
