I’ve done the airplane mode on and off,

I’ve knocked my phone on and off

also have taken the SIM card out and put it back in my device but now I’ve been logged out of my Apple iMessage/FaceTime etc

Did you give its contacts a good old clean with a dry cloth or tissue in between?

Assuming that this SIM was safely contained within a phone's physical SIM tray before the error occurred.... and thus that working physical connections tend not to break randomly.... or bits of dust randomly work their way into a SIM tray.... not impossible but highly unlikely....

One other possibility is hibernation and the SIM has been disconnected at the 6/9month point. Admittedly "no SIM" would be unusual in this situation.

Call CS with the SIM number handy.
