I’ve lost my phone and I need to cancel the SIM card, I’ve bought a new phone now with a new SIM card so I don’t need the old one or the old contract, I called EE and they told me I had to pay a £200 cancellation fee, there is no way I am paying to cancel a sim, it’s ridiculous.

Have you reported the phone as lost and had a block placed on the SIM card?
If you're in contract and want to cancel early there would be an early cancellation fee. We can send a replacement SIM card to use in any phone to continue with the contract after a phone has been lost.

Sounds like your line is still within its minimum contractual term and you are therefore asking to breach your contract.
Some would say it is indeed ridiculous to expect to do that without any financial cost. A replacement SIM can be supplied against your existing line, once you report your phone & SIM lost/stolen, there's no need to obtain a new line in these circumstances.
If you've bought that new SIM/phone via online or telesales (regardless of retailer), you have a statutory 14days "change of mind" right of return against it.
