Hi @Jackytav100,
When did you arrange your transfer to EE?
Have you received a SIM card in the post?

Is there any specific benefit of eSIM that appeals to you?
If not, physical SIMs can often be better than eSIM. I'm yet to identify any specific benefit of electronic over physical format.
It's only when your phone has a SIM-slot doubling as micro-SD space, and you want to use the SD space, that the eSIM thus allows use of external storage.

@Jackytav100 Pin for what ? If you want to use the rain on the device you can do this all on the device. In settings>mobile services you have the option to change over to the eSIM. It’s in blue and if I remember correctly it’s says change to eSIM. This will change the information on the sim to the eSIM and once done just bin the SIM card.
Just remember it’s not simple to switch an eSIM to a different device should you break your current device.
Personally if you’re asking others should you have a sim or eSIM then you don’t need to use the eSIM. You wont gain any from using the eSIM and you don’t need to use it because you’re asking if you should.
