What makes you think SIMs are "G" specific? EE SIMs are multi-technology and support all RATs from 2G through to 5G. It's your plan which enables access to specific technologies.
please check if your device has 5g capability its not the sim its the phone you use try going in the your phone setting an check if you have 5g turned on
