Hi, few days back I took a replacement sim in EE store and they didn't give me any receipt for that sim and I tried calling EE customer service many times but they didn't give me any thing related to that. Is there any way to get it in store or online ?

Replacement SIMs (being given a SIM with your same number to replace a lost/stolen/faulty SIM or to switch from physical SIM to eSIM or vice versa) do not attract any cost, so I am unsure of the benefit of a receipt in this case - potentially all this would provide is evidence that this transaction took place.
Nevertheless the store would generate a receipt locally for replacement SIMs when passing this through their POS system for stock tracking purposes. If you require a receipt for this you would need to request a reprint from them, which may or may not be possible if you did not request this at the time.

@Hemanth_17 : Didn't they give you the surrounding plastic card holder that the SIM was pushed out from? Won't that do?
