New Pay As You Go Sim Card

I purchased a Pay As You Go Sim

card when I landed at Gatwick last year.  Downloaded the app and activated the sim card. Everything worked great. Returned back to Canada and took the EE sim

card out.  I’m making a trip back to London in 3 weeks and plan on purchasing another Pay as you Go Sim

card when I land at Heathrow.  Do I have to delete the old phone number from the app before I activate the new  sim with the new phone number?

No, you can have as many nos. as you like under MyEE but it might be less confusing if you remove the old no.

There's no specific activation to be done. Just use it on EE's network.
