I agree. Instructions not at all clear. I have just installed and activated eSIM and have unlimited data in the UK.. I am now travelling in Germany but am not sure if I have same deal with roaming. I have increased my roaming allowance from £10 to £20 but not sure whether that covers me. What else should I do to avoid unintentional charges?

I've moved your post from the 2year old thread you'd added to. Whether you have an eSIM or pSIM is immaterial here - whose network is the SIM from?
If it's an EE SIM and you're in Germany, then the daily charge regime applies. Any day that you make or receive calls, send text messages or use mobile data - a £2.59 charge covers the use of all your UK allowances.
Connecting to a local network is free, as are receiving text messages. Any of the activities mentioned above, will trigger a daily charge, and cover all subsequent usage. If you choose to buy a weekly pass instead, that will negate daily charges for the duration.
If the SIM you're using is from a local operator, then that network sets the charges.
