What is the best method for using my phone in Australia?

@Golflady   There is no best method.  You purchase a pass or you don’t.  Or you purchase a local sim to use in your device

EE standard opening hours are Monday to Friday, 8am to 9pm - Saturday and Sunday, 8am to 8pm.

For Australia just head to Roaming in Australia

Before your trip remember to make sure your device is set up to roam by texting ROAMING to 150 (it's free)
If you're on Pay as you go, the Roaming service will already be active. 
 

Turn on data roaming in your device settings. Check our device guides for help

By default your data is blocked while abroad and will only work if you purchase a bundle. This avoids any accidental data charges. Bundles available will also be offered once you land in your destination.

Not so much a method but a means of paying for it or not.

You'll receive a Welcome text upon arrival at a country giving your roaming options & the opportunity to buy Roaming Passes.

If you are on contract, you may use your usual UK allowances in the EE ROW Zone 1 with up to 50 GB data per billing month if you have more, when you buy the Zone 1 Pass for £6 / day, £30 / week or £50 / 15 days or already have it as an Inclusive Extra or you have an EE Full Works or EE Max Plan. Otherwise you will need to pay the charges or buy roaming add-ons as set out in https://ee.co.uk/help/mobile/roaming/roaming-costs/.

If you are on contract, just remember to text ROAMING to 150 before leaving UK to ensure the roaming ability is enabled on your no.

If you are on PAYG, just make sure you had already used your PAYG SIM to make a call or text in the UK.
