Subscription Pack. 5G

I have 2 questions...

1. If I got a new phone, say iphone 16 which supports 5G, and moved my current sim to it (in an iPhone 11 at the moment which doesn't have 5G), will it automatically be able to connect to 5G in the new phone? I've had this sim for years (think since 2016) so would anything need updated for it to be able to connect to 5G or will it be automatic?

2. I am on a pay as you go subscription plan (£15 pack). If I switch to, say the £10 pack, will my data roll over from the last £15 when I switch, and will all previous free boots still apply?

Thanks in advance.
