Have been unable to make calls or receive calls on my EE network - keeps cutting off - just an iPhone 7 and pay as you go. Why?

You may want to take your SIM card out, clean it and the SIM card slot, try it in another phone, to see if there is a problem with your phone or SIM card. If you have someone else, who can put their SIM card in your phone to see if that may be the problem, if the problem occurs in multiple places.

Does your phone lose coverage when calls drop?

This would have a large bearing on whether it's likely to be SIM related.
