Just spoke to someone at EE and they said they can’t change the number on my order as I don’t have a EE number but how are u suppose to change over to EE if u need a EE number to access any help what so ever, customer services is a joke regretting my decision and I haven’t even started my contract yet…. Jokers

Were you with another network? If so did you get a PAC code from them to give to EE?
Generally we tell people once you have the EE SIM card, give the PAC code to EE and they will then move everything over. The SIM card you receive from EE has its own number, but once EE have the PAC code, they can change it to your old number.
