No…. No one knows anything when you call them and just tells you to go to your local shop ! So not helpful at all!!

I am sorry to hear you are having an issue activating your Apple One subscription. Do you see it active in your inclusive extra sections of your online account?
If on your phone you go to Settings >Tap your Apple ID (your name at the top of settings)> Tap Subscriptions>Tap EE Plan Benefits. Is Apple One showing there for you to activate?
Did you receive a text with an activation link when you added the Apple One subscription? If not are you able to activate using this or this link when on your mobile data connection?
Also common things that can cause activation issues are your number being incorrect in Settings> Apps> Phone> My Number. And using any VPNs or iCloud Private relay, so check on those as well.
