I’ve recently started a sim only with add ons. The add ons are there in My EE app but can’t activate them. I believe I should have had a text to do this from EE but haven’t. The sim has been active for a week. Any help? Thanks

Do the extra show as selected within your EE account? As the first time they are added that would usually trigger a text with the redemption information. If you scroll through your 150 messages on both phones is there anything?
With Netflix you can go to ee.co.uk/netflix to activate, the Xbox Game pass go to ee.co.uk/xbox and you need to enter the mobile number the add-ons are active on and follow the steps to complete activation. It is best to do the setup on mobile data rather than Wi-Fi.
For Apple TV+ try opening https://tv.apple.com/gb/carrier?p=EE_ATV&a=1472441559 on the phone in question on data.
