Esim - how to manage my data roaming correctly

I've just added an eSim to my iPhone for the first time and it's not crystal clear how to manage my data roaming in settings. I don't want to make an error and get stung for charges on my usual sim but the little help I've found online says you need both primary and secondary sims activated which doesn't seem right. Would appreciate any clarity.

@stevers  An eSIM works just the same as a physical sim its just built into the device.    You set this up how you want that sim to work abroad. 

To contact EE Customer Services dial 150 From your EE mobile or 0800 956 6000 from any other phone.
